Recipe Book: Baked Sweet Potato French Fries

So, a boring and rainy Saturday morning led to many hours on Pinterest.
Does that really surprise you? Didn't think so.
But through my scrolling adventures, I started stalking my own food board.
And the next thing I knew,
I was at my local market, ready to try a new recipe!

Now I'm human and I love carbs, especially potatoes.
Fried, baked, smashed, loaded with butter and sour cream, shaped into a smiley face, etc.
I don't discriminate. I love them all equally.

But I recently have a new love:
Sweet Potatoes!

I use to stay far away from them,
but now I have been eating and craving them like crazy!
They are filled with so many crazy good for you vitamins,
including a good source of Vitamin A, Vitamin C, and Vitamin B6.
And they have more than twice the fiber content as a regular potato!
And they just happen to be delicious too.

So my recipe for you all today:
Baked Sweet Potato Fries!


Super simply and easy, not many ingredients so it won't break the bank,
and a great, healthier substitute for regular french fries!

Here are the ingredients you'll need:
Two large sweet potatoes
Extra Virgin Olive Oil (or coconut oil)
Salt, Pepper

Prep time: 10 minutes
Cooking time: 20-25 minutes

Go ahead and set your oven to 450 degrees.

First, I washed and peeled my potatoes.


And continued to cut them into thinner slices.
(Sorry for my off-shaped french fries, working on my knife skills)

I lined two baking sheets with tin foil
(makes for an easier clean up)
And sprinkled the fries with about 2 tablespoons of extra virgin olive oil,
and salt and pepper to taste.


Once the oven was pre-heated, I put the french fries in to bake!
After about 10 minutes, I pulled them out to flip them over with tongs to the over side,
and put them back into the oven to bake another 10 minutes or so.
I was looking for a nice brown color on the outside,
and a decent crunch.

After they finished baking, I put when on a paper towel to drain off any extra oil.


And this is what the finished product turned out:


I'm super happy with the way the french fries turned out,
especially with this being the first time I've ever made them!
I served mine with a little side of ketchup, but you could serve them with whatever you'd like.
