Happy Holidays everyone!
I'm back with three easy cookie recipes for your next baking adventure.
I received so much positive feedback from people about these cookies,
so I thought I would share how I made them.
Cookies can making a great present for the neighbors and friends,
and baking is a great idea for families to send time together during the holidays.
Hope you enjoy these simple recipes!
Quick and easy for a last minute Christmas treat!
*Side note: when I went to store to purchase ingredients,
every place I went was out of holiday-themed and colored, well basically, everything.
So when baking, feel free to change the colors according to the season.
It's a Lexxbeck problem.

Hershey's Kisses Candies
Ingredient List:
1.) Package of Hershey Kisses
2.) Package of Pretzels
3.) Package of M&Ms
This is seriously the easiest recipe to make!
First, pre-heat your oven to 225 degrees.
While the oven in heating up, spread out your pretzels on your baking sheets,
placing one Hershey Kiss atop each one.
Carefully place the baking sheets in the oven,
making sure the chocolate stays on top of the pretzel.
Bake them for 3-5 minutes, until chocolate is melted slightly (still holding its shape).
While the chocolate is still hot,
push down one M&M in the middle of the chocolate kiss.
And that's it!
Note:
The kisses take a while to harden back up,
so I placed mine in the freezer for a few minutes before I handled them.
Italian Wedding Cookies
Ingredient List:
1.) 1/2 cup of butter, soften
2.) 3/4 cup of white sugar
3.) 4 eggs
4.) 2 teaspoons of vanilla extract
5.) 3 cups of all-purpose flour
6.) 3 teaspoons of baking powder
First, pre-heat your oven to 350 degrees.
In a mixing bowl, use a mixer to beat your eggs for about five minutes,
or until they become light and foamy. Set them aside.
Next, in a separate bowl, combine flour, sugar, and baking powder.
While mixing, add in your vanilla extract and your butter.
Mix until the batter forms a crumble-looking consistency.
Next, gradually add in your eggs while continuing to mix.
It will eventually combine into a sticker dough.
Roll your dough into 1/2 inch balls, placing them a little bit a part on your baking sheets.
Place in oven and bake for about 10-11 minutes.
Now, for the glaze!
Ingredient List:
1.) 3-3/4 cups of confectioners sugar
2.) 1/2 of warm milk
3.) 2 teaspoon of vanilla extract
To make the glaze, just mix the ingredients together in a bowl until smooth.
I used a hand mixer, and it took about a minute to combine everything.
Once the cookies are finished baking,
use a table spoon to pour a small amount of glaze over each cookie.
And I also used sprinkles to decorate.
Note:
Make sure you decorate quickly because the glaze hardens very fast!
Also, make sure your eggs are room temperature or they won't come out at fluffy.
Easy Sugar Cookies
Ingredients:
1.) 1 cup of butter, softened
2.) 1 cup granulated white sugar
3.) 1 1/2 teaspoon vanilla extract
4.) 1 egg
5.) 2 teaspoons of baking powder
6.) 3 cups of all purpose flour
2.) 1 cup granulated white sugar
3.) 1 1/2 teaspoon vanilla extract
4.) 1 egg
5.) 2 teaspoons of baking powder
6.) 3 cups of all purpose flour
To start, pre-heat your oven to 350 degrees.
In a mixing bowl, you want to add your butter and sugar and cream them together until smooth.
After the sugar and butter are combined, add in the extract and egg.
In a separate bowl, combine flour and baking powder.
Gradually add the dry ingredients into your wet (sugar combination).
I added mine in three parts, mixing completely before adding more.
Mix until it all comes together.
Now here's the kicker...
You don't have to chill this dough!
I know that making sugar cookies can be time consuming because if you want to
roll out the dough and cut shapes, chilling the dough can be a necessary step.
But this dough is naturally stiffer that no chilling is required!
So, flouring your surface, roll out your dough in batches, about 1/4 of an inch.
Place on baking sheet a little bit apart. They don't spread out too much.
Bake for 6-8 minutes, let cool, and then begin decorating.
It was late at night when I finally got to decorating.
So I look the semi-homemade route and used jarred icing, but feel free to make homemade.
Note:
The original recipe called for almond extract. I personally don't like the flavor,
so I substituted more vanilla flavoring.
But if you would like to use the almond extract,
use 1 teaspoon of vanilla and 1/2 teaspoon of the almond.

And those are my simple cookie recipes!
I hope you enjoy them, change them to your taste.
Happy Eve of Christmas Eve, everyone!
I hope your holiday season is filled with memories, many blessings, delicious food,
and lots of time with the family and your friends.
Until next time,
